Instructions

  1. Scald the Milk: In a small saucepan, heat the milk until small bubbles form around the edges and steam rises, but do not let it boil. This process helps activate the yeast better.
  2. Mix Milk and Water: Remove the scalded milk from heat, add the water, stir, and allow the mixture to cool until it reaches approximately 105°F, the ideal temperature for yeast activation.
  3. Bloom the Yeast: Stir in the yeast and a pinch of sugar into the milk-water mixture. Let it sit for about 5 minutes until the yeast becomes foamy, indicating it’s active.
  4. Add Butter and Egg: Mix the softened butter and beaten egg into the yeast mixture. Don’t worry if the butter doesn’t fully melt immediately; it will incorporate during mixing.
  5. Combine Ingredients in Mixer: Using a mini stand mixer with a dough hook, add the liquid ingredients and beat briefly to combine.
  6. Prepare Dry Ingredients: In a separate bowl, whisk together all-purpose flour, whole wheat flour, salt, and sugar.
  7. Add Dry Ingredients Gradually: With the mixer running, add the dry ingredients to the wet mixture in two batches to prevent clumping.
