This Buffalo Chicken Calzone recipe delivers a delicious fusion of spicy buffalo chicken wrapped in a golden, crispy calzone dough stuffed with gooey mozzarella cheese. Perfect for a quick and satisfying meal, these calzones are baked to bubbly perfection and served with classic blue cheese or ranch dressing for dipping.

Ingredients

Buffalo Chicken Filling

  • 2 cups cooked shredded chicken
  • 1/4 cup hot sauce

Calzone Dough & Cheese

  • 1 prepared pizza dough (about 16 oz)
  • 1 cup shredded mozzarella cheese (4 oz)

For Serving

  • Blue cheese or ranch dressing

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Lightly grease a baking sheet and set it aside to prepare for baking the calzones.
  2. Prepare Buffalo Chicken: In a mixing bowl, combine the cooked shredded chicken with the hot sauce until the chicken is evenly coated. Set this buffalo chicken mixture aside.
  3. Divide Dough: Depending on your preferred calzone size, divide the pizza dough into 2 large pieces for giant calzones or 4 smaller pieces for regular-sized calzones. Roll or press each piece into a rough circular shape.
  4. Assemble Calzones: For each calzone, place 1/4 cup of shredded mozzarella cheese in the bottom center of the dough round. Top with 1 cup of the buffalo chicken mixture, then sprinkle another 1/4 cup of cheese over the chicken. Carefully fold the dough over to form a pocket and seal the edges tightly by pressing together. If the dough edges don’t stick, dab them lightly with water to help seal.
  5. Prepare for Baking: Transfer the sealed calzones to the prepared baking sheet. Use a sharp knife to cut three small slits on the top of each calzone to allow steam to escape during baking. Repeat the assembly and prepping process with remaining dough and filling.
  6. Bake Calzones: Bake in the preheated oven for 15-20 minutes or until the calzones turn golden brown and the cheese inside is bubbly. Remove from the oven and let them cool slightly before serving.
  7. Serve: Serve each calzone warm with blue cheese or ranch dressing on the side for dipping. Enjoy your spicy, cheesy Buffalo Chicken Calzones!

Notes

  • You can adjust the heat level by varying the amount or type of hot sauce used.
  • For added flavor, consider adding a sprinkle of chopped fresh parsley or green onions before folding the calzone.
  • Make sure not to overfill the calzones to prevent the filling from leaking out during baking.
  • If you prefer a crispier crust, brush the tops of the calzones with a little olive oil or egg wash before baking.
  • Leftovers can be reheated in the oven to maintain the crust’s crispiness.
