These Buffalo Chicken Egg Rolls combine spicy shredded chicken with crisp cabbage and carrots, all wrapped in crunchy egg roll wrappers. They can be baked for a lighter version or fried for a classic crispy texture, served perfectly alongside ranch or blue cheese dressing for dipping.

Ingredients

Filling

  • 2 cups chopped cooked chicken
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 2-4 tablespoons hot sauce
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon black pepper

For Wrapping and Cooking

  • 12 egg roll wrappers
  • Vegetable oil (for frying or spraying if baking)
  • Ranch dressing or blue cheese dressing, for dipping

Instructions

  1. Prepare the filling: In a large bowl, combine the chopped cooked chicken, shredded cabbage, shredded carrots, hot sauce, garlic powder, and black pepper. Mix thoroughly. Taste and add salt if needed. For extra heat, add more hot sauce.
  2. Assemble the egg rolls: Place one egg roll wrapper on a flat surface with one point facing you to form a diamond shape. Spoon 2 heaping tablespoons of the chicken mixture into the center of the wrapper.
  3. Fold the wrapper: Fold the bottom corner up over the filling, then fold the left and right corners inward toward the center. Moisten the top corner with water to seal the roll. Roll tightly like a small burrito. Repeat with all wrappers and filling.
  4. Bake option – preheat oven: Preheat your oven to 425°F (220°C). Spray a baking sheet with nonstick spray or lightly brush with oil. Place egg rolls on the sheet, spaced apart. Lightly spray the tops of the egg rolls with oil.
  5. Bake the egg rolls: Bake for 10-15 minutes until the egg rolls are crisp and golden brown.
  6. Fry option – heat oil: Heat vegetable oil in a deep pan over high heat, enough for shallow frying. Carefully place egg rolls in the hot oil without overcrowding.
  7. Fry the egg rolls: Cook each side for about 2 minutes until deep golden brown. Remove and drain on paper towels to remove excess oil.
  8. Serve: Serve warm with ranch or blue cheese dressing and extra buffalo sauce if desired.
