Ingredients

Filling

  • 3 cups Cooked Shredded Chicken

  • 6 tablespoons Hot Sauce
  • 3 tablespoons Crumbled Blue Cheese

Dough and Frying

  • 10 Empanada Dough Discs
  • Vegetable Oil, for frying (enough to fill pan about 1/2 inch deep)

Instructions

  1. Season the Chicken: If your cooked chicken hasn’t been seasoned, sprinkle it with salt, black pepper, and garlic powder to taste, ensuring the filling will be flavorful.
  2. Mix the Filling: In a large bowl, combine the shredded chicken with hot sauce and crumbled blue cheese. Toss everything together until the ingredients are evenly incorporated.
  3. Fill the Empanadas: Take one empanada dough disc and place about 2 heaping tablespoons of the buffalo chicken mixture in the center. Fold the disc in half to form a half-moon shape and press the edges firmly with a fork to seal. Repeat this process with the remaining discs and filling.
  4. Heat the Oil: Pour vegetable oil into a medium frying pan to reach about halfway up the sides of the empanadas, approximately 1/2 inch, depending on dough thickness. Heat the oil over medium-high heat until shimmering and hot enough for frying.
  5. Fry the Empanadas: Working in small batches to avoid overcrowding, carefully place the empanadas in a single layer in the hot oil. Fry each side for about 2-3 minutes, or until the dough turns golden brown and is fully cooked inside, ensuring a crispy texture.
