Ingredients

Vegetables

  • 3 cups finely shredded cabbage
  • ½ small brown onion, finely sliced
  • 23 spring onions, finely sliced

Dry Ingredients

  • ¾ cup self-raising flour
  • ½ teaspoon garlic powder
  • ½ teaspoon curry powder
  • Salt and pepper, to taste

Wet Ingredients

  • 2 eggs
  • 12 tablespoons dairy free milk (such as oat milk or soy milk), if needed

  • Canola oil, for frying

Instructions

  1. Mix Ingredients: Combine the shredded cabbage, finely sliced brown onion, spring onions, self-raising flour, garlic powder, curry powder, salt, and pepper in a large bowl. Add the eggs and mix well until fully combined.
  2. Adjust Batter Consistency: As the cabbage releases moisture, the mixture will start to come together. If the batter is too thick, add dairy-free milk a little at a time to achieve a thick and sticky consistency. You might not need to add milk at all.
  3. Rest Batter: Let the mixture rest for 10 minutes. This resting time helps the batter bind and improves the texture of fritters.
  4. Heat Oil: In a large frying pan over medium heat, heat about 2 tablespoons of canola oil until hot.
  5. Fry Fritters: Scoop ¼ cup of batter per fritter into the pan. Gently flatten each fritter into a round shape. Cook for 3 to 4 minutes on each side until they are deep golden brown and cooked through. Fry in batches to avoid overcrowding.
  6. Drain and Serve: Transfer cooked fritters to a plate lined with paper towels to drain excess oil. Serve hot and enjoy.
