Instructions

  1. Prepare the Fruits and Nuts: Slice the green apple into 8 wedges, then cut each wedge into 3 chunks, making a total of 24 apple pieces. Cut the medjool dates in half and then each half into 3-4 small pieces. Chop the peanuts into small pieces for easier adhesion to the chocolate.
  2. Melt the Chocolate: Place the chocolate chips and coconut oil into a microwave-safe bowl. Microwave in 30-second increments, stirring well between each interval, until the chocolate is smooth and fully melted. Stirring prevents burning and ensures even melting.
  3. Prepare the Base: Line a baking sheet with parchment paper. Spread out the 24 pretzels in a single layer on the sheet as the base for each bite.
  4. Assemble the Bites: Push a toothpick down through a chunk of apple with the green skin side facing up to prevent browning, then pierce a piece of date on the same toothpick so it sits just below the apple chunk. Hold the toothpick and dip the apple piece into the melted chocolate, coating all four sides but leaving the green top exposed. Allow excess chocolate to drip back into the bowl.
