A refreshing and elegant Champagne Mojito with a twist of fresh grapefruit juice, mint, white rum, and sparkling wine, perfect for a vibrant and citrusy cocktail experience.

Ingredients

For One Cocktail

  • 4-5 fresh mint leaves
  • 2 oz white rum
  • 2 oz fresh grapefruit juice
  • 1 tbsp lime juice
  • 1 tbsp simple syrup
  • 4 oz sparkling wine or club soda

Pitcher Recipe

  • 8 oz white rum
  • 8 oz fresh grapefruit juice
  • A great big handful of fresh mint leaves
  • 2 oz simple syrup (or more to taste)
  • 2 oz lime juice (or more to taste)

Instructions

  1. Juice Grapefruits: Start by juicing fresh grapefruits to obtain 2 ounces of grapefruit juice for a single cocktail or 8 ounces for the pitcher recipe.
  2. Combine Ingredients: In a tall highball glass, add the white rum, fresh mint leaves, and grapefruit juice.
  3. Muddle Mint: Using a muddler or similar tool, gently press the mint to release its flavors but avoid shredding it excessively.
  4. Add Lime and Syrup: Pour in the lime juice and simple syrup, then muddle briefly again to combine and enhance the citrusy sweetness.
  5. Add Ice: Fill the glass with ice cubes to chill your cocktail effectively.
  6. Top with Sparkling Wine: Carefully pour 4 ounces of sparkling wine or club soda over the ice to top off the Mojito.
  7. Garnish and Serve: Garnish with a fresh sprig of mint for aroma and a beautiful finish before serving.
  8. For Pitcher Preparation: Mix together the rum, grapefruit juice, mint, simple syrup, and lime juice without ice and without adding sparkling wine. When serving, fill a glass with ice, add 3 ounces of this pitcher mix, and top with sparkling wine.

Notes

  • To make a pitcher, scale up the ingredients as outlined and omit ice and sparkling wine during mixing.
  • Add sparkling wine just before serving to keep it bubbly and fresh.
  • Adjust the amount of simple syrup and lime juice to suit your taste preferences for sweetness and tartness.
  • Use freshly squeezed juice for the best flavor.
  • Club soda can be used instead of sparkling wine for a lighter, non-alcoholic variation.
