A quick and easy Cheese Quesadilla recipe featuring melted Monterey Jack, cheddar, or Chihuahua cheese folded inside warm flour tortillas, cooked to golden perfection in a skillet. Perfect as a snack or light meal served with guacamole, sour cream, and salsa.

Ingredients

Quesadilla Ingredients

  • 1 tablespoon butter
  • 2 large flour tortillas (10-inch burrito size)
  • 2 cups shredded cheese (Monterey Jack, cheddar, or Chihuahua), divided

Serving Accompaniments

  • Guacamole
  • Sour cream
  • Salsa

Instructions

  1. Melt the butter: In a large skillet over medium-high heat, melt 1 tablespoon of butter until fully liquefied and slightly bubbling, preparing the pan for cooking the quesadillas.
  2. Prepare the quesadillas: Lay each flour tortilla flat and evenly layer 1 cup of shredded cheese onto half of each tortilla. Fold the tortilla over to enclose the cheese, creating a half-moon shape.
  3. Cook the quesadillas: Place the folded quesadillas onto the skillet and cook for 1 to 2 minutes per side. Flip carefully to ensure both sides become golden brown and the cheese inside melts completely.
  4. Serve: Remove from the skillet and cut into wedges. Serve hot with guacamole, sour cream, and your favorite salsa for dipping.

Notes

  • Use medium heat to prevent burning the tortillas while ensuring cheese melts thoroughly.
  • Feel free to mix different types of cheeses for a richer flavor.
  • Optional additions: add cooked chicken, sautéed vegetables, or jalapeños inside for extra taste.
  • To reheat, place quesadillas back in a skillet over low heat to crisp up and remelt cheese.
