A refreshing and vibrant Cherry Lime Refresher made with homemade cherry syrup, lime juice, and sparkling water. Perfect for hot days, this sparkling beverage blends the sweetness of cherries with a tangy lime twist, served chilled over ice for a delightful, fizzy treat.

Ingredients

Syrup Ingredients

  • 700 g (2 bags) frozen cherries
  • 350 ml water
  • 110 g caster sugar
  • 2 teaspoons lime juice

To Serve

  • Ice cubes
  • 3 lime slices (for garnish)
  • Sparkling water

Instructions

  1. Make Syrup: Add the frozen cherries, water, and caster sugar to a medium saucepan. Heat the mixture over medium heat until it starts simmering.
  2. Simmer: Continue cooking the cherry mixture for 5 minutes to release the flavors and dissolve the sugar completely.
  3. Add Lime Juice: Remove the pan from heat and stir in the lime juice. This adds a bright, tangy flavor to the syrup.
  4. Cool and Blend: Let the syrup cool for about 30 minutes to avoid steam or splashes during blending. Then blend the mixture until smooth, either using a stick blender directly in the pan or by transferring it to a blender. For a pulp-free syrup, strain the blended mixture through a fine sieve into a large jug.
  5. Store Syrup: Once completely cooled, pour the syrup into an airtight jug or carafe and refrigerate. The syrup can be stored for 2-3 weeks.
  6. Prepare to Serve: To serve, add ice cubes and three lime slices into each glass.
  7. Mix Drink: Pour sparkling water into each glass using approximately twice the amount of sparkling water to syrup. A suggested ratio is 200 ml sparkling water followed by 100 ml cherry lime syrup for each glass.

  • This homemade syrup will keep refrigerated for up to 2-3 weeks.
  • Straining the syrup after blending creates a smoother drink with no pulp.
  • Adjust the syrup-to-sparkling water ratio based on your taste preference for sweetness and tartness.
  • For a more intense lime flavor, add extra lime juice before blending.
  • Use fresh limes if possible for garnish and lime juice for better flavor.
