This nutritious Chia and Flaxseed Pudding is a simple and wholesome breakfast or snack option that combines the health benefits of chia seeds and ground flaxseed with the natural sweetness of maple syrup and a hint of warming cardamom. Ready in just a couple of hours, it’s a no-cook, fridge-set pudding that’s perfect for meal prep and customization with your favorite toppings.

Ingredients

Chia and Flaxseed Pudding

  • 2 tbsp chia seeds
  • 1.5 tbsp ground flaxseed (also known as milled flaxseed)
  • 2 tsp maple syrup
  • 1/4 tsp cardamom (or cinnamon, optional)
  • 1/2 cup plant milk (such as almond, soy, oat, or coconut milk)

Instructions

  1. Combine Ingredients: Add the chia seeds, ground flaxseed, maple syrup, cardamom or cinnamon (if using) into a mason jar or any sealable container. Pour in the plant milk of your choice to create the pudding base.
  2. Mix Thoroughly: Use a spoon or whisk to stir the mixture well, ensuring the chia seeds and flaxseed are evenly distributed throughout the milk to prevent clumping.
  3. Refrigerate to Set: Place the container in the refrigerator for 2 hours. If possible, stir the pudding after 30 minutes to break up any seed clumps and encourage even thickening.
  4. Add Toppings and Serve: Once set, top your pudding with fresh fruits, jam, or nut/seed butters to your liking, then enjoy as a nutritious breakfast or snack.

Notes

  • Stirring after 30 minutes helps avoid clumps and creates a creamier texture.
  • Use your preferred plant-based milk; each will give a slightly different flavor and creaminess.
  • You can prepare this pudding ahead and store it in the fridge for up to 2 days.
  • For added protein, consider mixing in a scoop of plant-based protein powder or topping with nuts and seeds.
  • Optional spices like cinnamon or nutmeg can be used instead of cardamom for different flavor variations.
