This Chicken Sweetcorn Sandwich Filler is a quick and delicious recipe perfect for a light meal or snack. Combining tender cooked chicken, sweetcorn, celery, and a creamy mayonnaise dressing with a hint of garlic and onion powder, it creates a flavorful and satisfying sandwich filling that pairs perfectly with buttered baguettes or your bread of choice.

Ingredients

Sandwich Filler Ingredients

  • 2 cooked chicken breasts (or 200g/7oz cooked cold chicken), diced
  • 2 celery sticks, cut in half lengthways and thinly sliced
  • 198 g canned sweetcorn, drained (or 165g/6oz cooked cold frozen corn)
  • 180 g mayonnaise
  • Big pinch each of garlic powder and onion powder (or 1/2 tsp Season-All, optional)
  • Salt & black pepper to taste
  • Buttered baguettes or bread of choice

Instructions

  1. Combine Ingredients: In a large bowl, add the diced cooked chicken, thinly sliced celery sticks, drained sweetcorn, and mayonnaise. Sprinkle in a big pinch of garlic powder and onion powder or Season-All if using. Season with salt and black pepper according to taste.
  2. Toss Until Combined: Mix all the ingredients gently but thoroughly until the chicken and vegetables are evenly coated with the mayonnaise and seasonings. This ensures every bite is flavorful.
  3. Serve or Chill: You can serve the filling immediately by spooning it onto buttered baguettes or bread of your choice for a tasty sandwich. Alternatively, cover and chill the mixture in an airtight container to let the flavors meld together. The filler can be stored in the fridge for up to 2 days, perfect for preparing ahead.

Notes

  • You can substitute cooked chicken breasts with shredded rotisserie chicken or leftover roast chicken.
  • If preferred, replace mayonnaise with a lighter yogurt-based dressing for a lower-fat option.
  • Adding a squeeze of lemon juice can brighten the flavors if desired.
  • Season-All is a mixed seasoning salt that can replace garlic and onion powders for convenience.
  • The mixture can also be used as a filling for wraps or served atop a salad for variety.
