Instructions

  1. Prepare the chicken: Adjust a rack to the center position in the oven and preheat to 375°F (190°C). Line a rimmed baking sheet with foil and spray the foil with olive oil spray to prevent sticking. Place the chicken breasts on the prepared baking sheet and season both sides with ½ teaspoon kosher salt and ¼ teaspoon black pepper. Bake until the chicken is cooked through, approximately 20 minutes. Remove from the oven and shred the chicken using two forks. Set aside.
  2. Toast the noodles: In a Dutch oven, heat 2 tablespoons of vegetable oil over medium-high heat. Add the fideo noodles and cook while stirring occasionally for about 3 minutes, until they become lightly browned and fragrant. Be careful not to burn the noodles.

  6. Combine shredded chicken and final seasoning: Add the shredded chicken and 2 tablespoons chopped cilantro to the soup. Season with 1 teaspoon kosher salt and ¼ teaspoon black pepper. Stir well to combine and heat through.
