This decadent Chocolate Cherry Mud Cake combines rich chocolate cake batter with sweet, tangy frozen cherries, resulting in a fudgy and gooey dessert perfect for any occasion. The recipe uses a boxed chocolate cake mix combined with cherry-flavored sparkling water for a moist texture, baked until perfectly set on top with a luscious center.

Ingredients

Main Ingredients

  • 4 cups sweet pitted frozen cherries
  • 1½ cups chocolate boxed cake mix
  • 1 cup berry or cherry-flavored sparkling water

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly mist a 9×13-inch baking dish with nonstick spray to prevent sticking.
  2. Prepare the Base: Spread the sweet, pitted frozen cherries evenly across the bottom of the prepared baking dish. There’s no need to thaw the cherries; add them straight from the freezer, breaking up any clumps for even coverage.
  3. Add Cake Mix and Sparkling Water: Sprinkle 1½ cups of the chocolate boxed cake mix evenly over the cherries. Pour 1 cup of berry or cherry-flavored sparkling water (use only 1 cup, not the entire can) over the top. Gently stir everything together directly in the baking dish until the cake mix is fully combined and the mixture thickens.
  4. Bake the Cake: Place the baking dish in the preheated oven and bake for approximately 50 minutes, or until the top is set and the center remains fudgy and gooey, typical of a mud cake texture.
  5. Cool and Serve: Allow the cake to cool slightly in the dish. Scoop into bowls and serve warm. For an extra indulgence, add a dollop of whipped cream or a scoop of vanilla ice cream on top.

Notes

  • Do not thaw the frozen cherries before adding; this prevents excess moisture from diluting the cake batter.
  • Use only 1 cup of sparkling water as instructed to achieve the desired batter consistency.
  • For best flavor, select a cherry or berry-flavored sparkling water to enhance the cherry notes.
  • The cake is best served warm to enjoy the gooey chocolate cherry center.
  • Leftovers can be refrigerated and gently reheated before serving.
