Ingredients

Crust

  • 2 cups (225g) Oreo cookie crumbs
  • 6 Tbsp melted unsalted butter

Mascarpone Filling

  • 1/2 cup cold whipping cream

  • 3/4 cup sugar
  • 1 tsp vanilla extract

Chocolate Ganache

  • 8 oz dark chocolate chips (or semi-sweet)
  • 1 cup whipping cream

Garnish

  • 1-2 tsp sea salt flakes

Instructions

  1. Prepare the crust: Mix the Oreo cookie crumbs with the melted unsalted butter until fully combined. Press the mixture firmly onto the bottom and sides of a 9-inch tart pan with a removable bottom. Place the crust in the freezer to chill and set.
  2. Whip the cream: Using a handheld mixer, whip the cold whipping cream until soft peaks form. Set aside for later incorporation.
  3. Make the mascarpone filling: In a separate bowl, beat the softened mascarpone cheese with sugar and vanilla extract until smooth and combined. Gently fold in the whipped cream until the mixture is homogenous and creamy. Spoon the mascarpone filling onto the chilled crust and spread evenly. Return the tart to the freezer for at least 1 hour to set.
  4. Prepare the ganache: Place the whipping cream in a small saucepan and heat over medium heat, stirring constantly until it reaches a gentle simmer. Remove from heat and immediately pour the hot cream over the dark chocolate chips. Cover and let steep for 5 minutes to allow the chocolate to melt. Whisk until smooth.
  5. Assemble the tart: Pour the chocolate ganache evenly over the frozen mascarpone filling. Spread carefully to the edges if needed. Refrigerate the tart uncovered for the first hour to avoid condensation, then cover and chill for at least one more hour until ready to serve.
