Ingredients

Beef and Seasoning

  • 4 pounds boneless beef chuck roast
  • 4 tablespoons Dalkin&Co Taco Seasoning
  • Kosher salt and freshly cracked black pepper, to taste

Additional Flavorings

  • 2 onions, cut into quarters, paper removed
  • ½ cup orange juice
  • ½ cup beef stock

Serving

  • 1 recipe guacamole
  • Small flour tortillas
  • Your favorite salsa

Instructions

  1. Preheat and Season: Preheat your oven to 325°F. Generously season the chuck roast on both sides with kosher salt, freshly cracked black pepper, and the Dalkin&Co Taco Seasoning to infuse deep flavors into the meat.
  2. Initial Braise: Place the seasoned chuck roast into a Dutch oven along with the quartered onions, orange juice, and beef stock. Secure the lid on the Dutch oven and transfer it to the oven. Bake for 3.5 to 4 hours until the meat is tender enough to shred easily with forks.
  3. Check Doneness and Adjust: After the cook time, remove the roast and try shredding it into large chunks. If it doesn’t fall apart easily, return it to the oven with the lid on for an additional 30 minutes to further tenderize.
  4. Caramelize the Meat: Increase the oven temperature to 425°F. On a baking sheet, toss the shredded meat with the cooked onions and sprinkle more taco seasoning. Spread evenly and bake uncovered for 15–25 minutes, allowing the edges to caramelize and become crispy.
  5. Prepare Guacamole: While the meat caramelizes, prepare your guacamole following your preferred recipe to serve fresh and vibrant alongside the tacos.
  6. Char Tortillas and Assemble: Char small flour tortillas over an open flame for a smoky flavor and pliable texture. Assemble the tacos by layering a dollop of guacamole, a generous spoonful of the shredded, caramelized meat, and your favorite salsa or taco toppings.
