Ingredients

  • 2/3 cups Walnuts
  • 3 tablespoons Cacao powder
  • 3 tablespoons Hemp Hearts
  • 1/4 cup Old Fashioned Oats
  • 1/8 cup Collagen powder
  • 2/3 cup Shredded Coconut

Wet Ingredients

  • 2 tablespoons Maple syrup

Instructions

  1. Prepare the Walnuts and Dates: In a food processor, grind the walnuts into a coarse flour, leaving a bit of texture. Add the soaked dates and process again until the mixture is combined and smooth, stopping to scrape down the sides or use a tamper as needed.
  2. Mix Dry Ingredients: Transfer the blended mixture into a bowl, then add cacao powder, hemp hearts, collagen powder, and maple syrup. Stir until well combined.
  3. Add Oats: The mixture will appear wet and sticky; add the oats and mix thoroughly to integrate.
  4. Prepare for Rolling: Line a baking tray with parchment paper and pour shredded coconut into a shallow bowl for coating.
  5. Form and Coat Balls: Rub coconut oil on your hands or moisten them with water to prevent sticking. Portion out the mixture into balls, then roll each ball in shredded coconut until fully coated. Place the balls on the lined baking tray.
  6. Set the Balls: Place the tray with the rolled balls in the freezer for 20-30 minutes to allow them to firm up before serving.
