Ingredients

For the Espresso Whipped Cream

  • 4 cups heavy whipping cream, chilled
  • 3 tablespoons instant espresso mix
  • 1/2 cup powdered sugar
  • 2 teaspoons vanilla extract

For the Graham Cracker Layers

  • 20-25 graham crackers
  • 1/4 cup milk
  • 5 tablespoons instant espresso mix

For Garnish

  • 2 tablespoons cocoa powder

Instructions

  1. Prepare Espresso Whipped Cream: In a large mixing bowl, dissolve 3 tablespoons of instant espresso mix into the chilled heavy whipping cream. Once fully combined, add the powdered sugar and vanilla extract. Using an electric mixer on medium speed, whip the mixture until it forms stiff peaks, ensuring a light and airy texture.
  2. Soak Graham Crackers: In a shallow dish, combine the milk with the remaining 5 tablespoons of instant espresso mix, stirring until the espresso dissolves completely. Dip each graham cracker into this espresso milk mixture briefly, just enough to soak without becoming soggy.
  3. Layer the Cake: Arrange a single layer of soaked graham crackers at the bottom of a 9×13 inch baking dish, breaking crackers as needed to cover the surface completely. Spread one-third of the prepared espresso whipped cream evenly over this layer.
  4. Repeat Layers: Add another layer of espresso-soaked graham crackers over the whipped cream, then spread another third of the cream mixture on top. Follow with a final layer of soaked crackers and finish by spreading the remaining cream over the top layer.
  5. Chill and Set: Cover the assembled cake tightly with plastic wrap and refrigerate for at least three hours, preferably overnight, to allow the flavors to meld and the layers to set firmly.
  6. Final Touches: Before serving, freeze the cake for 1 hour to achieve a firmer texture. Dust the top evenly with cocoa powder. Slice and enjoy the rich, creamy coffee-flavored dessert.
