Cowboy Caviar is a vibrant, fresh, and flavorful Tex-Mex salsa made with black beans, black-eyed peas, white corn, chopped vegetables, and a tangy dressing. This easy-to-make dish is perfect as a dip for tortilla chips or as a zesty side salad, bringing a colorful touch to any gathering or meal.

Ingredients

Salsa Ingredients

  • 1 can (15-16 ounces) black beans, rinsed and drained
  • 1 can (15-16 ounces) black-eyed peas, rinsed and drained
  • 2 cans (11 ounces each) white shoepeg corn or 2 cups fresh raw sweet corn kernels
  • 1 jar (4 ounces) chopped pimentos, drained
  • 1½ cups diced green pepper
  • 1½ cups thinly sliced green onion
  • 1 cup diced celery
  • 1 cup chopped cilantro
  • 2 tablespoons minced jalapeno (adjust to taste)
  • 1 teaspoon minced garlic

Dressing Ingredients

  • ½ cup vegetable oil
  • ½ cup rice vinegar
  • ½ cup sugar
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon Morton kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon ground cumin

Instructions

  1. Combine Salsa Ingredients: In a large bowl, gently fold together the black beans, black-eyed peas, white corn, chopped pimentos, green pepper, green onion, celery, cilantro, minced jalapeno, and minced garlic until well-mixed but not mashed.
  2. Prepare Dressing: Add the vegetable oil, rice vinegar, sugar, lime juice, kosher salt, black pepper, and cumin to a jar or bowl. Secure a tight-fitting lid and shake vigorously for 30 seconds, or whisk until the sugar is fully dissolved and the dressing is well combined.
  3. Mix Dressing with Salsa: Pour the dressing evenly over the salsa mixture. Fold gently a few times to incorporate the dressing throughout the ingredients without breaking them down.
  4. Chill and Marinate: Cover the bowl tightly and refrigerate the cowboy caviar for at least 1 hour, allowing the flavors to meld. It can be prepared up to 1 day in advance for even deeper flavor.
  5. Serve: Before serving, fold the salsa a few more times. Optionally, drain any excess dressing or juices to your preference. Serve cowboy caviar with your favorite tortilla chips or Fritos corn chips, or use as a relish or side salad to complement your meal.
