Pastry

  • 1 sheet of frozen puff pastry, thawed overnight in fridge

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to ensure it reaches the right temperature while you prepare the filling and pastry.
  2. Cook the vegetables: Melt the butter in a small saucepan over medium heat. Add the diced onion, carrot, celery, and frozen corn. Sauté, stirring occasionally, for about 5 minutes until the vegetables are softened.
  3. Add the flour: Sprinkle the all-purpose flour over the sautéed vegetables and cook for 30 seconds while stirring to eliminate the raw flour taste and start thickening the mixture.
  4. Make the creamy base: Gradually pour in the chicken stock and whole milk (or cream). Add dried thyme, salt, and freshly ground black pepper. Stir the mixture and bring it to a simmer, cooking until it thickens slightly. Taste and adjust the seasoning as needed.
  5. Incorporate the chicken: Stir in the shredded cooked chicken into the filling mixture, then remove the saucepan from the heat.
