Perfect for an easy dinner, the slow cooker method infuses the chicken with savory Italian herbs and a hint of spice for a comforting, restaurant-quality meal at home.

Ingredients

Chicken

  • 4 large boneless skinless chicken breasts

Seasonings

  • 1 ½ teaspoons Italian seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika
  • ¼ teaspoon red pepper flakes

Sauce

  • 1 cup heavy whipping cream
  • ½ cup chicken broth
  • 1 tablespoon cornstarch
  • 4 cloves garlic, minced
  • ½ cup sundried tomatoes, drained and chopped
  • ½ cup parmesan cheese, grated
  • 1 cup baby spinach, chopped

Instructions

  1. Prepare the slow cooker: Spray your slow cooker with nonstick cooking spray or line it with a crockpot liner to prevent sticking and make cleanup easier.
  2. Add the chicken: Place the 4 large boneless skinless chicken breasts into the slow cooker, arranging them evenly at the bottom.
  3. Make the sauce: In a small bowl, combine heavy whipping cream, chicken broth, cornstarch, minced garlic, drained and chopped sundried tomatoes, grated parmesan cheese, Italian seasoning, kosher salt, black pepper, onion powder, paprika, and red pepper flakes. Mix well until the cornstarch is fully incorporated and the sauce is smooth.
  4. Pour the sauce over the chicken: Evenly pour the prepared creamy sauce over the chicken breasts in the slow cooker, ensuring each piece is coated.
  5. Cook the chicken: Place the lid on the slow cooker and cook on high for 3 hours or on low for 5 hours. Check the internal temperature of the chicken breasts to make sure they reach 165°F (74°C), adjusting time as needed depending on thickness.
  6. Add spinach and finish cooking: Once the chicken is cooked, stir the sauce gently and add the chopped baby spinach. Cover and cook for about 10 more minutes until the spinach wilts and incorporates into the creamy sauce.
  7. Serve: Serve the creamy Tuscan chicken over pasta, rice, or potatoes for a complete and satisfying meal.

Notes

  • Adjust cooking time according to your slow cooker model and chicken thickness to avoid over or undercooking.
  • Using a crockpot liner helps reduce cleanup time.
  • For a lower fat version, substitute heavy cream with half-and-half or a lighter cream, but this may impact the richness of the sauce.
  • Ensure the internal temperature of chicken reaches 165°F for food safety.
  • This dish pairs well with garlic bread or steamed vegetables for a balanced meal.
