  • 2-3 tbsp diced jalapeños
  • 2-3 tbsp scallions
  • 2-3 tsp Dijon mustard
  • 1.5 tbsp Greek yogurt
  • 1 tbsp chili oil (optional for heat)
  • 2-3 tsp sesame seeds (plus more for garnish)
  • ½ tbsp lemon juice
  • Pinch of salt & black pepper
  • Fresh herbs (for garnish)

To Serve

  • Toasted bread (preferably crusty sourdough)

Instructions

  1. Soft-boil the eggs: Bring a pot of water to a boil, then add 1 tbsp vinegar and ½ tbsp salt. Reduce heat to a gentle simmer and carefully add the eggs to the pot. Allow the eggs to simmer for exactly 6.5 minutes. Use a timer for accuracy.
  2. Cool and peel the eggs: Once the cooking time is up, immediately transfer the eggs to a bowl of ice water to stop the cooking process. Let them cool completely before gently cracking and peeling the shells.
  3. Prepare the egg salad mix: Chop the peeled eggs and add them to a mixing bowl alongside the diced onions, jalapeños, scallions, Dijon mustard, Greek yogurt, chili oil (if using), sesame seeds, lemon juice, and a pinch of salt and black pepper.
  4. Combine the ingredients: Mix everything thoroughly until well combined. Taste and adjust seasoning or lemon juice according to your preference to achieve the perfect balance of tang and heat.
