Ingredients

Avocado Fries

  • 2 large avocados, ripe but very firm
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 2 egg whites, beaten until frothy
  • 1 cup Panko bread crumbs
  • 1 tablespoon Parmesan cheese

Campfire Sauce

  • 4 tablespoons mayonnaise
  • 2 tablespoons barbecue sauce

Instructions

  1. Prepare baking sheet: Lightly grease a baking sheet with cooking spray and set it aside to prevent sticking.
  2. Cut avocados: Slice the avocados in half, carefully remove the pits, peel off the skin, and cut each half into 1/4-inch thick wedges.
  3. Prepare flour mixture: On a shallow plate, mix together the flour and salt.
  4. Whisk egg whites: In a bowl, whisk egg whites until they become frothy and foamy.
  5. Prepare breadcrumb mixture: On another shallow plate, combine Panko bread crumbs with Parmesan cheese.
  6. Coat avocados: Lightly dredge each avocado wedge in the flour mixture, shaking off any excess.
  7. Dip in egg whites: Dip the floured avocado wedges into the frothy egg whites.
  8. Coat with breadcrumbs: Dredge the wedges in the breadcrumb and Parmesan mixture, pressing gently to ensure they are fully coated.
  9. Arrange and spray: Place the breaded avocado wedges in a single layer on the baking sheet and spray the tops lightly with cooking spray.
  10. Bake: Bake in a preheated 425°F (220°C) oven for 10 to 15 minutes, or until the fries are golden and crisp.
  11. Make campfire sauce: In a small bowl, whisk together mayonnaise and barbecue sauce until smooth and well combined.
  12. Serve: Serve the hot avocado fries immediately with the campfire sauce for dipping.
