Ingredients

Beef and Bean Filling

  • 2 teaspoons olive oil
  • 1 pound lean ground beef
  • ¾ teaspoon kosher salt, divided
  • 1 (15-ounce) can black beans, drained and rinsed
  • 2 tablespoons tomato paste
  • ½ teaspoon mild chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder

Assembly

  • 10 (7.5-inch) medium flour tortillas
  • 1 ¼ cups shredded cheddar or Mexican blend cheese
  • avocado oil cooking spray

Dipping Sauce (Optional)

  • ½ cup 2% plain Greek yogurt (or sour cream)
  • 1 cup chunky-style salsa

Instructions

  1. Preheat and Prep: Preheat your oven to 425°F (220°C). Lightly coat a large sheet pan with avocado oil cooking spray to prevent sticking.
  2. Brown The Beef: Heat a large skillet over medium heat. Add the olive oil, ground beef, and ½ teaspoon kosher salt. Cook while breaking the beef apart with a spatula until browned and almost fully cooked, about 5-6 minutes.
  3. Add the Beans & Seasonings: Stir in the tomato paste, drained black beans, chili powder, smoked paprika, onion powder, garlic powder, and the remaining ¼ teaspoon salt. Simmer the mixture for 2–3 minutes, stirring frequently until thickened. Add a splash of water if the mixture starts sticking. Mash the beans gently into the meat mixture with the back of a fork to combine flavors.
  4. Assemble The Tacos: Lay tortillas flat on the prepared sheet pan. Spoon approximately 2 tablespoons of the beef and bean filling onto one half of each tortilla. Sprinkle about 2 tablespoons of shredded cheese evenly over the filling.
  5. Bake Until Crispy: Spray both sides of the filled tortillas lightly with avocado oil cooking spray. Arrange them evenly on the baking sheet with minimal overlap. Bake in the preheated oven for 15-20 minutes, flipping halfway through, until the tortillas are crisp and golden on both sides. Remove and let them cool slightly before serving.
  6. Prepare Dipping Sauce (Optional): In a small bowl, combine the Greek yogurt (or sour cream) with the chunky salsa, stirring until smooth. Serve this as a dipping sauce alongside the tacos or drizzle inside each taco before serving.
