Crispy Parmesan Carrots are a delightful side dish featuring tender roasted carrots coated in a flavorful blend of garlic, smoked paprika, cumin, and chili, finished with a crispy cheesy crust made from freshly grated Parmigiano Reggiano. This simple oven-roasted recipe creates a perfect balance of savory, spicy, and cheesy flavors with a satisfying crunchy texture.

Ingredients

Carrots

  • 6 medium-large carrots (approx 700 grams)

Marinade

  • 2 tablespoons extra virgin olive oil
  • 2 large garlic cloves, minced or grated
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin powder
  • ½ teaspoon chili powder or red pepper flakes (adjust to taste)
  • Handful fresh parsley, finely chopped
  • Pinch of sea salt

Cheese

  • 70 grams freshly grated Parmesan cheese (Parmigiano Reggiano)

Instructions

  1. Preheat and Prepare Carrots: Preheat your oven to 200°C (400°F). Peel the carrots and cut each one lengthwise into quarters so that each piece has a flat side.
  2. Make the Marinade: In a large bowl, combine the olive oil, minced garlic, smoked paprika, cumin powder, chili powder or red pepper flakes, chopped parsley, and a pinch of sea salt. Stir well to create a flavorful marinade.
  3. Coat the Carrots: Add the carrot pieces to the marinade and toss thoroughly to ensure every carrot is well coated with the spices and oil.
  4. Prepare the Baking Sheet: Sprinkle a handful of the grated Parmesan cheese evenly over a non-stick oven dish or baking sheet.
  5. Dip Carrots in Cheese: Dip the flat sides of each carrot piece into the remaining grated Parmesan cheese so that they are coated, then place them cheese-side down on the prepared baking sheet. Arrange the carrots in a single even layer without gaps.
  6. Roast the Carrots: Roast in the preheated oven for 20 to 25 minutes, depending on your oven’s strength. Check doneness by inserting a toothpick or fork to verify the carrots are fork-tender and fully cooked.
  7. Flip and Serve: Remove the baking sheet from the oven and immediately use a spatula to carefully flip the carrots over to reveal a beautiful crispy parmesan crust. Serve warm.
