  • 1 lb russet potatoes (scrubbed clean)
  • ¼ cup oil (vegetable, olive, or a combination)
  • 1 teaspoon kosher salt

Topping

  • ½ cup grated parmesan cheese
  • 1 teaspoon white truffle oil
  • 1 tablespoon parsley (finely minced)

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper to ensure the fries bake evenly and don’t stick.
  2. Prepare the potatoes: Slice the russet potatoes into ½ to ¼ inch thick slices. Stack the slices and cut them into long strips to form fries. Place the cut potatoes in a bowl and pour hot (not boiling) water over them. Let soak for 10 minutes to remove excess starch, which helps achieve crispiness. Drain and thoroughly pat the fries dry with a kitchen towel.
  3. Season the fries: Spread the dried potato strips on the parchment-lined baking sheet. Drizzle with the vegetable or olive oil and sprinkle with kosher salt. Toss gently to coat all fries evenly with oil and salt.
  4. Bake until crispy: Place the baking sheet in the preheated oven. Bake for 20-25 minutes, turning halfway if desired, until the fries are golden brown and crisp. Remove from the oven and briefly drain on paper towels to absorb any excess oil.
  5. Toss with toppings: Transfer the fries into a bowl. Sprinkle grated parmesan cheese, drizzle the white truffle oil, and add the finely minced parsley. Quickly toss the fries to evenly coat them with the cheese, truffle oil, and herbs. Serve immediately while hot and crispy.
