This Crockpot Sausage and Potatoes recipe combines tender red potatoes, flavorful smoked sausage, and fresh green beans for an easy, hearty meal. Cooked low and slow in a crockpot, the ingredients meld together perfectly with a blend of spices, making it a comforting and simple dish perfect for busy weeknights.

Ingredients

Vegetables

  • pounds red potatoes, cut into 1- inch pieces
  • 1 medium yellow onion, cut into 1-inch pieces
  • 1 pound fresh green beans, rinsed and trimmed (optional)

Seasonings

  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon granulated garlic or garlic powder
  • ½ teaspoon smoked or regular paprika

Protein

  • 14 ounces smoked sausage or kielbasa, cut into 1 inch pieces

Instructions

  1. Prepare the vegetables and seasonings: Place the cut potatoes and onions in the crockpot. Drizzle the olive oil over the vegetables, then sprinkle the kosher salt, black pepper, granulated garlic (or garlic powder), and paprika. Toss everything well to ensure the potatoes and onions are evenly coated with oil and spices.
  2. Add the sausage: Add the sliced smoked sausage or kielbasa into the crockpot, stirring gently to mix it throughout the vegetables.
  3. Add green beans and begin cooking: Layer the rinsed and trimmed green beans over the potatoes and sausage. Cover the crockpot with the lid and cook on the LOW setting for 3 to 4 hours.
  4. Check and continue cooking: After the initial cooking time, uncover the crockpot and stir the mixture. Continue cooking as needed until the potatoes and green beans are tender when pierced with a fork. This may take additional 30 minutes to 1 hour depending on your crockpot and ingredient sizes.

Notes

  • You can double the amount of sausage if feeding a family of meat lovers for a heartier dish.
  • If you prefer, no green beans are required; you can omit them or substitute with other vegetables like carrots or bell peppers.
  • Adjust seasoning according to taste, especially salt and paprika, to suit personal preference.
