Ingredients

For the Dressing and Onions

  • 2 tablespoons red wine vinegar
  • 1 teaspoon sugar (or honey)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup red onion (quartered and thinly sliced, about 1 small onion)

For the Salad

  • 2 medium cucumbers
  • 1 pint cherry tomatoes
  • 4 oz. feta cheese
  • 2 tablespoons fresh parsley (chopped, or substitute dill, chives, or cilantro)
  • 1/4 cup extra-virgin olive oil

Instructions

  1. Prepare the Dressing and Onions: In a small bowl, combine red wine vinegar, sugar, kosher salt, and black pepper. Add the thinly sliced red onions and stir well to coat. Let the mixture sit for 5-10 minutes, stirring once or twice to ensure the onions absorb the flavors.
  2. Prepare the Cucumbers: While onions marinate, trim the ends off the cucumbers, slice them in half lengthwise, and scoop out the seeds with a spoon. Discard the seeds and slice the cucumber halves thinly, about 1/4 inch thick. Add the sliced cucumbers to a large mixing bowl.
  3. Add Tomatoes: Cut the cherry tomatoes in half and add them to the bowl with the cucumbers.
  4. Add Feta Cheese: Crumble the feta cheese using a fork if it is not pre-crumbled, then add it to the bowl with the vegetables.
  5. Mix Dressing: Drizzle the olive oil into the small bowl with the marinated onions, add the chopped fresh parsley or other chosen herbs, and whisk together until well combined.
  6. Toss Salad: Pour the dressing and onion mixture into the large bowl containing cucumbers, tomatoes, and feta. Toss everything gently to coat all ingredients evenly. Serve immediately for the freshest taste and texture.
