This layered cocktail features a rich, aromatic syrup made from cinnamon, cloves, allspice, vanilla, nutmeg, and fresh ginger, creating a complex flavor profile balanced perfectly with the zing of lime and the spice of ginger beer.

Ingredients

Syrup Ingredients

  • 1/2 cup sugar
  • 1 1/2 cups water
  • 6 sticks cinnamon (grate 1/4 of one stick into the mix)
  • 30 whole cloves
  • 10 allspice berries
  • 1/4 tsp ground allspice
  • 1 vanilla bean (cut in half and seeds scraped out)
  • 1/2 tsp fresh grated nutmeg
  • 1/4 cup fresh ginger (sliced)

Cocktail Ingredients

  • 3 oz lime juice
  • 2 oz Goslings Black Seal Rum
  • 4 oz ginger beer
  • 1 oz spiced simple syrup (prepared as above)

Instructions

  1. Make the Syrup: In a pot, combine sugar, water, cinnamon sticks (including grated cinnamon), whole cloves, allspice berries, ground allspice, vanilla bean halves with seeds, fresh grated nutmeg, and sliced ginger. Bring this mix to a simmer over medium heat to infuse the flavors.
  2. Simmer the Syrup: Once simmering, reduce heat to low and let it gently simmer for 10 to 15 minutes or until the syrup slightly thickens and coats the back of a spoon, releasing deep aromatic flavors from the spices.
  3. Strain and Cool: Remove the pot from heat and let the syrup cool slightly. Strain the syrup through a fine sieve to remove all spices and solids, then transfer to a jar or container. Store in the refrigerator if not using immediately.
  4. Prepare the Glass: Fill a tall cocktail glass with ice. This chills the glass and keeps the cocktail refreshingly cold.
  5. Add Ginger Beer and Spiced Syrup: Pour the ginger beer into the glass first, followed by the spiced syrup. The syrup will naturally sink to the bottom, creating a layered effect.
  6. Layer the Rum: Hold a spoon upside down just above the ginger beer layer and slowly pour the Goslings Black Seal Rum over the back of the spoon. This technique floats the rum on top of the layers to enhance the visual presentation and flavor experience.
  7. Serve and Stir Before Drinking: Present the cocktail in its layers but advise stirring well before sipping to blend the flavors harmoniously. Garnish with a lime wedge for added zest.
