  • 1 pound silken tofu

Instructions

  1. Boil Water: In a small saucepan, bring ¾ cup of water to a boil to prepare the tea infusion.
  2. Steep Tea: Remove the saucepan from heat, add the Earl Grey tea bag, cover with a lid, and steep for 6 to 10 minutes (around 8 minutes is recommended for a balanced flavor).
  3. Simmer Tea: Remove the tea bag from the water and return the saucepan to a simmer to maintain warmth.
  4. Melt Chocolate: Remove the saucepan from heat again, then add maple syrup and chopped dark chocolate, stirring gently until the chocolate melts completely.
  5. Blend Mixture: Transfer the warm chocolate mixture, vanilla extract, salt, and silken tofu to a high-speed blender. Purée thoroughly until the mousse is completely smooth, pausing to scrape down the blender sides to ensure full incorporation.
  6. Chill Mousse: Evenly divide the mousse among 6 ramekins. Refrigerate for at least 4 hours, or up to overnight, to allow the mousse to set and flavors to meld.
  7. Serve: Before serving, top each mousse with a dollop of coconut whipped cream and garnish with chocolate shavings if desired for an extra touch of indulgence.
