This Easy Caesar Salad Dressing is a creamy, tangy, and flavorful homemade dressing that combines classic ingredients like mayonnaise, Greek yogurt, garlic, lemon juice, and Parmesan cheese. Perfectly balanced with a hint of anchovy paste and extra-virgin olive oil, it delivers an authentic Caesar salad experience in minutes without the need for complicated preparation.

Ingredients

Base Ingredients

  • 1/2 cup good quality mayonnaise
  • 1/2 cup Greek yogurt
  • 2 medium cloves garlic, finely minced
  • 2 tbsp fresh lemon juice
  • 2 tsp Dijon mustard
  • 1/2 tsp Worcestershire sauce
  • 1/4 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp anchovy paste (or fish sauce), optional

Finishing Ingredients

  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp good quality extra-virgin olive oil
  • Milk to thin if needed

Instructions

  1. Combine base ingredients: In a medium-sized bowl, whisk together the mayonnaise, Greek yogurt, finely minced garlic, fresh lemon juice, Dijon mustard, Worcestershire sauce, kosher salt, ground black pepper, and optional anchovy paste or fish sauce until the mixture is smooth and well blended.
  2. Add Parmesan cheese: Stir in the freshly grated Parmesan cheese until fully incorporated into the dressing base.
  3. Incorporate olive oil: Slowly drizzle in the extra-virgin olive oil while whisking vigorously to emulsify and create a creamy texture. Taste the dressing and adjust seasoning by adding more lemon juice, salt, or anchovy paste as desired.
  4. Adjust consistency: If the dressing is too thick, thin it to your preferred consistency by adding a little milk, mixing well after each addition.

Notes

  • For a stronger anchovy flavor, do not omit the anchovy paste as it adds authentic umami to the dressing.
  • This dressing can be stored in an airtight container in the refrigerator for up to 5 days.
  • If you prefer a lighter version, use low-fat mayonnaise and yogurt.
  • Whisking olive oil in slowly helps to emulsify the dressing properly for a creamy texture.
  • Adjust the garlic amount to your taste preference for more or less pungency.
