  • 3 each Chicken Breasts
  • 6 teaspoons Blackened Seasoning

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry thoroughly with paper towels to ensure a good sear. Brush each breast evenly with canola oil, reserving the remaining oil for cooking.
  2. Season the Chicken: Generously season each chicken breast with approximately 2 teaspoons of blackened seasoning, rubbing it into the meat for maximum flavor penetration. Let the seasoned chicken rest at room temperature for 40 to 60 minutes to marinate and come to an even temperature.
  3. Heat the Skillet: Add the remaining canola oil to a large cast iron skillet and heat over medium-high heat until it is very hot and just beginning to smoke, ideal for a perfect blackened crust.
  4. Cook the Chicken: Carefully place each chicken breast in the hot skillet, listening for a strong sizzle which indicates the pan is hot enough. Avoid moving the chicken until it naturally releases from the pan. Cook each side for about 6 minutes, flipping once halfway through to form a dark, flavorful crust and to cook the chicken through.
  5. Rest and Finish: Remove the cooked chicken breasts from the skillet and transfer them to a plate.
