  • 1 tablespoon low-sodium Cajun seasoning (or your favorite Cajun seasoning)
  • ½ teaspoon + ⅛ teaspoon paprika
  • ½ teaspoon roasted granulated garlic
  • ¼ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon Aleppo pepper
  • ¼ teaspoon dried thyme
  • ⅛ teaspoon smoked paprika
  • ⅛ teaspoon cumin
  • ⅛ teaspoon salt

Instructions

  1. Heat the Oil: Place an 11-inch nonstick skillet over high heat. Add the olive oil and let it heat until shimmering, ensuring it’s hot enough to toast the spices properly.
  2. Sauté the Jalapeño & Spices: Add the chopped jalapeño and the pre-mixed Cajun seasoning blend to the hot skillet. Stir continuously for about 1 minute to toast the spices and release their rich, aromatic flavors into the oil and jalapeño.
  3. Cook the Corn: Pour in the vegetable stock along with the frozen or fresh corn kernels. Add black pepper to taste. Stir everything well, bring the mixture to a gentle simmer, and cook uncovered for about 15 minutes or until the liquid has fully evaporated and the corn is tender and infused with the Cajun spices.
  4. Serve & Enjoy: Remove from heat and serve warm as a flavorful side dish, as a spicy topping for grilled proteins, or mixed into salads or rice for added zest and texture.
