Ingredients

Potatoes & Base

  • 30 oz frozen shredded hash browns (about 10 cups, preferably Mr. Dells brand)
  • 1/4 cup + 2 tablespoons butter

Cheese & Dairy

  • 1 can cream of chicken soup
  • 12 ounces sour cream
  • 1/2 cup milk
  • 2 cups grated cheddar cheese (sharp cheddar, pre-shredded)

Vegetables & Toppings

  • 1/2 cup chopped green onions
  • 1 cup crushed corn flakes

Instructions

  1. Preheat Oven: Preheat your oven to 340ºF, an unusual but perfect temperature for this casserole that ensures even cooking without drying out.
  2. Mix Creamy Base: In a bowl, combine the cream of chicken soup, sour cream, milk, and chopped green onions. Mix thoroughly and set aside to blend the flavors.
  3. Prepare Baking Dish: Pour 1/4 cup melted butter into a 9″ x 13″ baking dish, spreading it evenly to coat the bottom and help prevent sticking.
  4. Layer Half the Potatoes: Add half of the frozen shredded hash browns (about 5 cups) into the baking dish. Evenly pour half of the soup and sour cream mixture over the potatoes, then sprinkle 1 cup of shredded cheddar cheese on top.
  5. Layer Remaining Ingredients: Add the remaining hash browns, followed by the rest of the soup mixture. Sprinkle the remaining 1 cup of cheddar cheese evenly on top. Then, cover everything with a layer of 1 cup crushed corn flakes.
  6. Add Butter Topping: Melt the remaining 2 tablespoons of butter and drizzle it evenly over the cornflake topping to create a golden, crispy crust while baking.
  7. Bake: Place the casserole in the preheated oven and bake for 1 hour until it is hot, bubbly, and the cornflake topping is golden and crisp. Allow to cool slightly before serving.
