Ingredients

Cinnamon Rolls

  • 3 loaves frozen bread dough (31 pound loaves)
  • ½ cup butter, softened
  • ½ cup white sugar
  • 1 tablespoon cinnamon
  • ½ cup heavy cream (for pouring)

Frosting

  • ¼ cup butter
  • 3 cups powdered sugar
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon salt
  • ⅓ cup heavy cream

Instructions

  1. Thaw the dough: Allow the frozen bread dough to thaw completely. For best results, leave it in the refrigerator overnight to defrost slowly and evenly.
  2. Roll out the dough: Combine the three loaves and roll them out into a large rectangle about ¼ inch thick, preparing the surface for the filling.
  3. Spread butter and cinnamon sugar: Evenly spread the softened butter over the entire dough surface. In a separate bowl, mix the white sugar and cinnamon, then sprinkle this mixture evenly over the butter layer.
  4. Form the rolls: Tightly roll the dough along the long edge to form a log. Use dental floss or a serrated knife to cut the log into 12 equal slices.
  5. Prepare for rising: Lightly spray a 9×13-inch casserole dish with cooking spray. Place the cinnamon roll slices into the dish, cover lightly with plastic wrap, and let them rise in a warm area until doubled in size, approximately 30 to 60 minutes. Meanwhile, preheat the oven to 350°F.
  6. Add heavy cream and bake: Just before baking, pour ½ cup of heavy cream evenly over the rolls. Bake in the preheated oven for 22 to 28 minutes or until the rolls are cooked through and golden brown on top.
  7. Prepare the frosting: While the rolls are cooling, combine ¼ cup of butter, vanilla extract, and salt in a large bowl. Alternately add powdered sugar and ⅓ cup heavy cream, mixing with an electric mixer until the frosting is light and fluffy.
  8. Frost the rolls: Once the cinnamon rolls are warm to the touch but not hot, spread the prepared frosting generously over the top. Serve warm and enjoy.

Notes

  • For an overnight rise, prepare the rolls and cover them tightly, then refrigerate overnight and bake the next morning by allowing them to come to room temperature before baking.
  • Using dental floss to cut the rolls creates cleaner slices without squishing the dough.
  • Make sure to pour the heavy cream over the rolls before baking to help keep them moist and tender.
  • Allow the rolls to cool slightly before spreading frosting; too hot rolls can cause the frosting to melt and run off.
