This Easy Coffee Oatmeal recipe transforms your leftover brewed coffee into a delicious and energizing breakfast. Combining quick oats with brewed coffee, banana, dates, chia seeds, and optional toppings like toasted walnuts and chocolate chips, this oatmeal is both comforting and flavorful. Ingredients

Oatmeal Base

  • 1 cup quick oats (or rolled oats)
  • 2 cups brewed coffee (use additional water or milk of choice if you have less than 2 cups)
  • Pinch of salt

Add-ins

  • 1 banana, sliced
  • 4 deglet noor dates, pitted and chopped
  • ½ tbsp chia seeds
  • ½ tbsp maple syrup

Toppings (Optional)

  • 1 tbsp toasted walnuts
  • ½ tbsp chocolate chips

Instructions

  1. Combine oats and coffee: In a small pot, mix 1 cup of quick or rolled oats with 2 cups of leftover brewed coffee. If you don’t have a full 2 cups of coffee, top up the remaining liquid with water or your preferred plant-based milk to reach 2 cups.
  2. Add salt and bring to boil: Add a pinch of salt to the mixture and bring it to a boil over medium heat, which enhances the flavors and prepares the oats for cooking.
  3. Simmer with add-ins: Reduce the heat to a simmer and stir in the sliced banana (reserve a few slices for garnish), chopped dates, chia seeds, and maple syrup. Cook the mixture for about 3 minutes or until the oats are tender and most of the liquid is absorbed.
  4. Serve with toppings: Divide the cooked oatmeal into bowls, garnish with the reserved banana slices, and sprinkle with optional toasted walnuts and chocolate chips for added texture and taste.

Notes

  • If you prefer creamier oatmeal, substitute part or all of the water with milk or a plant-based milk of your choice.
  • Maple syrup can be adjusted or omitted based on your sweetness preference.
