A flavorful and easy-to-make fried rice recipe loaded with vegetables, scrambled eggs, and seasoned with soy sauce, oyster sauce, and toasted sesame oil. Perfect as a quick weeknight dinner or a delicious side dish.

Ingredients

Vegetables and Seasonings

  • 1 Tablespoon olive oil
  • 1 Tablespoon minced garlic
  • 1/2 cup diced onions
  • 1 cup frozen peas and carrots
  • 2 teaspoons garlic salt
  • 1 teaspoon black pepper
  • Sliced green onions for garnish

Eggs

  • 2 large eggs
  • 2 Tablespoons butter

Rice and Sauces

  • 8 cups cooked white rice
  • 3 Tablespoons oyster sauce
  • 1/4 cup soy sauce
  • 1 1/2 Tablespoons toasted sesame oil

Instructions

  1. Heat the oil and sauté garlic: Heat olive oil in a skillet over medium-high heat until shimmering. Add minced garlic and sauté for one minute until fragrant.
  2. Cook the vegetables: Add diced onions, frozen peas and carrots, garlic salt, and black pepper to the skillet. Cook for 3-4 minutes or until the vegetables are tender. Remove the vegetable mixture from the skillet and set aside on a plate.
  3. Prepare the eggs: In a small bowl, beat the eggs with a fork until blended.
  4. Scramble the eggs: Return the empty skillet to the stove (no need to wash). Melt the butter over medium-high heat. Pour in the beaten eggs and stir regularly with a rubber spatula until the eggs are fully scrambled. Remove the eggs to a plate and set aside.
  5. Cook the rice with sauces: Return the empty skillet to the stove (no need to wash). Add the cooked white rice, oyster sauce, and soy sauce. Stir well to ensure the rice is evenly coated with the sauces.
  6. Combine all ingredients: Add the cooked vegetables and scrambled eggs back into the skillet with the rice. Stir thoroughly to combine all ingredients.
  7. Add sesame oil and finish: Drizzle the toasted sesame oil over the rice mixture and stir well to distribute the flavor evenly.
  8. Garnish and serve: Garnish the fried rice with sliced green onions if desired, then serve hot.

Notes

  • For best results, use day-old cooked rice to prevent clumping.
  • You can substitute the frozen peas and carrots with fresh vegetables if preferred.
  • Adjust soy sauce quantity to control saltiness according to your taste.
  • For a vegetarian version, omit oyster sauce or use a vegetarian oyster sauce alternative.
