  • 6 cups hot water
  • 2 cloves (whole)

Simple Syrup

  • 2 cups water
  • 1 cup sugar

Instructions

  1. Prepare the Simple Syrup: In a medium saucepan, combine 1 cup sugar and 2 cups water. Heat over low heat, stirring occasionally until the sugar is fully dissolved. Remove from heat and allow to cool completely.
  2. Grind the Rice: Using a food processor or coffee grinder, pulverize the 1 cup of long-grain rice until it reaches the consistency of ground coffee, which helps release the starches for better flavor extraction.
  3. Soak the Rice Mixture: In a large saucepan, bring 6 cups of water to a boil over high heat. Once boiling, remove from heat and let it cool down slightly. Add the ground rice, 1 cinnamon stick, and 2 whole cloves to the water. Cover the saucepan and allow the mixture to soak at room temperature for 8 hours or overnight to infuse flavors deeply.
  4. Blend the Soaked Mixture: After soaking, break the cinnamon stick into halves and transfer the soaked water, rice, broken cinnamon stick, and cloves into a blender. Puree on high speed for 2-3 minutes to fully incorporate and break down the ingredients.
  5. Strain the Horchata: Pour the blended liquid through a fine strainer lined with a double layer of cheesecloth into a large pitcher. Squeeze the cheesecloth to extract all the liquid, leaving behind the solids to discard.
  6. Add Flavorings and Sweeten: Stir in 1/2 teaspoon vanilla extract and 2 cups of the previously prepared simple syrup into the strained horchata. Mix well to combine.
  7. Chill and Serve: Cover and refrigerate the horchata until cold. Before serving, stir well and pour over ice cubes for a refreshing drink.
