Sauce

  • 4 scallions (thinly sliced, white and green parts divided)
  • 4 cloves garlic (minced)
  • 1/2 teaspoon red chili flakes
  • 3/4 cup unsalted chicken stock
  • 3/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • Cornstarch slurry (1 tablespoon water + 1 tablespoon cornstarch)

Instructions

  1. Prepare the popcorn chicken: Preheat your oven and cook the popcorn chicken according to the package directions. Once cooked, set aside to keep warm.
  2. Heat oil and aromatics: In a large wok or skillet over medium heat, add the vegetable oil. When the oil is hot, add the white parts of the scallions, minced garlic, and red chili flakes. Stir constantly and cook for about 30 seconds until fragrant, being careful not to burn the garlic.
