  • 64 Biscoff cookies (about 2 packs), can substitute with graham crackers if preferred

Instructions

  1. Prepare Mangoes: Peel and chop the mangoes; thinly slice 2 mangoes for decoration and chop 4 into small cubes for layering. Smaller cubes allow for easier serving and a balanced texture in the float.
  2. Whip Heavy Cream: In a large bowl, whisk the chilled heavy cream on medium speed until it thickens and forms ribbons but has not reached stiff peaks.
  3. Add Sweetened Condensed Milk: Gradually add the sweetened condensed milk to the whipped cream, continuing to whisk on medium speed until the mixture forms stiff peaks. Be careful not to overmix to maintain a light, airy texture.
  4. Prepare Pan: Use a 9×9 inch baking pan for assembling the float. For easy removal, line the pan with parchment paper leaving overhang on two sides; otherwise, you may serve directly from the pan.
  5. First Layer Assembly: Arrange a layer of Biscoff cookies at the bottom of the pan, spread one-third of the whipped cream mixture evenly over the cookies, then generously add the chopped mangoes on top.
  6. Second Layer Assembly: Repeat the layering process: cookies, whipped cream, then mangoes.
  7. Final Layer and Topping: Place another layer of cookies followed by the remaining whipped cream. Finish with sliced mangoes and crushed cookies on top for decoration.
  8. Chill: Cover the pan with cling wrap and refrigerate overnight to allow the flavors to meld and the dessert to set properly.
