These Easy Roasted Potatoes are crispy on the outside and tender on the inside, perfectly seasoned with Italian herbs and spices. Ingredients

Potatoes

  • 2 lbs. scrubbed and diced russet potatoes (about 3.5 – 4 cups)

Seasoning & Oil

  • 1/4 cup olive oil
  • 1 Tbsp Italian seasoning
  • 1-2 tsp sea salt
  • 1 tsp onion powder
  • 1 tsp garlic powder

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Coat Potatoes: Place the diced potatoes in a large container with a lid or a zip-lock bag. Add the olive oil, Italian seasoning, sea salt, onion powder, and garlic powder. Secure the container or seal the bag, then shake vigorously until all potatoes are evenly coated with the oil and spices.
  3. Arrange and Bake: Spread the coated potatoes evenly across the prepared baking sheet in a single layer. Bake in the preheated oven for 20 minutes.
  4. Flip and Continue Baking: After 20 minutes, carefully use a spatula to flip the potatoes to promote even browning. Return them to the oven and bake for an additional 20 minutes, until golden and crispy on the outside and tender inside.
  5. Cool and Serve: Let the roasted potatoes cool for a few minutes before serving. They pair perfectly with seitan roasts, sandwiches, veggie bowls, or a morning tofu scramble.
