Ingredients

Cherry Filling

  • 2 ½ pounds fresh dark cherries, pitted (see notes below if using frozen cherries)

  • ¾ cup granulated sugar
  • ¼ cup all purpose flour

Cobbler Dough

  • 1½ cups all purpose flour
  • ¾ cups sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup melted butter
  • ⅓ cup heavy cream

Almond Topping

  • ½ cup sliced almonds
  • 2 tablespoons granulated sugar
  • 1 tablespoon butter, melted

Instructions

  1. Preheat the Oven: Preheat your oven to 375 °F (190 °C) and lightly coat a 13- x 9-inch baking dish with nonstick cooking spray to prepare it for the cobbler.
  2. Prepare the Cherry Filling: In a large bowl, toss the pitted cherries with fresh lemon juice and pure vanilla extract. Add granulated sugar and ¼ cup all-purpose flour, then stir well to combine and coat the cherries evenly. Pour this mixture into the prepared baking dish.
  3. Make the Cobbler Dough: In a medium mixing bowl, whisk together 1½ cups all-purpose flour, ¾ cup sugar, baking powder, and salt. Add melted butter and heavy cream to the dry ingredients, stirring gently until a soft dough forms.
  4. Assemble the Cobbler: Scatter pieces of the cobbler dough evenly over the cherry filling, covering the fruit mostly but allowing some cherries to peek through.
  5. Prepare the Almond Topping: In a small bowl, combine sliced almonds, 2 tablespoons granulated sugar, and 1 tablespoon melted butter. Sprinkle this mixture evenly over the cobbler dough.
  6. Bake the Cobbler: Place the baking dish in the preheated oven and bake for 30 to 35 minutes. Bake until the cherry filling is bubbly and the topping is golden brown. If the cobbler topping browns too quickly, cover loosely with a sheet of foil for the rest of the baking time.
