Ingredients

Strawberry Syrup

  • 1.5 lb fresh strawberries
  • ¼ cup sugar
  • 3 tablespoons honey
  • 1 tablespoon lemon juice

Instructions

  1. Prepare Strawberries: Cut the strawberries into cubes. Put about two-thirds of the strawberries into a medium pot to start creating the syrup.
  2. Add Sweeteners and Lemon: Add the honey, sugar, and lemon juice to the pot with the strawberries. Stir thoroughly to coat all the strawberries with the sugar and honey mixture.
  3. Simmer Mixture: Set the heat to medium and allow the mixture to simmer for 15 minutes. Stir frequently to prevent burning, and cook until the strawberries soften and release their juices, forming a sweet syrup.
  4. Add Remaining Strawberries: After 15 minutes, add the remaining fresh strawberries to the pot. Gently mix and cook for an additional 2 minutes to slightly soften these strawberries without breaking them down completely.
  5. Store Syrup: Transfer the strawberry syrup to a clean glass jar. Allow it to cool to room temperature, then refrigerate. The syrup can be kept in the fridge for up to three weeks.
  6. Serve Strawberry Milk: When ready to serve, add 2-4 tablespoons of the strawberry syrup to a glass, pour in cold milk or coconut milk, and add ice cubes. Shake or stir well to combine and enjoy the fresh Korean strawberry milk.
