This Fresh Strawberry Simple Syrup is a sweet and vibrant syrup made by simmering fresh strawberries with water and sugar. Perfect for adding a natural strawberry flavor to drinks, cocktails, homemade sodas, or desserts, this syrup is easy to make and stores well in the refrigerator or freezer.

  • 8 ounces (227 grams) fresh strawberries
  • 1 cup (240 ml) distilled or filtered water
  • 1 cup (200 grams) granulated sugar

Instructions

  1. Prepare the Strawberries: Wash the strawberries thoroughly. Remove the green stems or hull the strawberries by cutting off the tops. Cut the strawberries in half, leaving smaller strawberries whole for even cooking.
  2. Combine Ingredients: In a 3 or 4-quart saucepan, place the prepared strawberries, water, and granulated sugar. Stir gently until the sugar begins to dissolve.
  3. Simmer the Mixture: Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer gently for 10 minutes, allowing the strawberries to break down and infuse their flavor.
  4. Steep the Strawberries: Remove the saucepan from heat and allow the strawberries to steep in the syrup for 15 minutes, enhancing the flavor extraction and deepening the color.
  5. Strain the Syrup: Set a fine mesh strainer over a medium-sized bowl or measuring cup. Pour the mixture through the strainer without pressing the fruit, letting it drain naturally for 15 minutes until the syrup is clear and dark red.
  6. Cool and Store: Let the syrup cool to room temperature. Transfer it into a clean glass jar or airtight container and refrigerate for up to 2 weeks. Alternatively, freeze for up to 3 months.
  7. Optional – Thicker Syrup: For a thicker consistency, return the strained syrup to the saucepan and simmer over medium-low heat until it reduces by about one-third.
  8. Use the Syrup: Use this strawberry syrup to sweeten drinks or cocktails, or mix with club soda for a homemade strawberry soda. It can also be frozen into ice cubes to flavor beverages.

Notes

  • Use fresh, in-season strawberries for the best flavor. Frozen strawberries can be substituted if fresh are unavailable.
  • Do not press the strawberries when straining to avoid pulp in the syrup for a clear finish.
