Ingredients

Butter Mixture

  • 6 tablespoons butter (room temperature)
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon paprika

Mushrooms and Seasonings

  • 2 pounds mushrooms (halved)
  • 4 cloves garlic (minced)
  • Pink salt (to taste)
  • Cracked black pepper (to taste)

Herbs and Finishing Touches

  • 2 tablespoons fresh flat-leaf parsley (chopped)
  • 1 tablespoon fresh chives (chopped)
  • 2 teaspoons fresh thyme leaves (chopped)
  • 1 lemon (zested and juiced)
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  1. Prepare the Butter Mixture: In a small bowl, combine the butter, olive oil, Dijon mustard, cayenne pepper, and paprika, stirring to create a smooth, well-blended mixture.
  2. Heat the Skillet: Place a large sauté pan or skillet over medium heat. Add the prepared butter mixture to the pan and allow the butter to melt completely, ensuring the spices infuse the oil and butter blend.
  3. Cook Mushrooms Part 1: Add the halved mushrooms to the melted butter mixture. Cook for 5 minutes, stirring occasionally to flip the mushrooms so they brown evenly on all sides.
  4. Add Garlic and Season: Stir in the minced garlic along with pink salt and cracked black pepper to taste. Continue cooking the mushrooms for an additional 5 minutes, allowing the garlic to soften and flavors to meld.
  5. Add Herbs and Lemon: Mix in the fresh parsley, chives, thyme leaves, lemon juice, lemon zest, and crushed red pepper flakes, distributing the ingredients evenly throughout the mushrooms.
  6. Simmer: Reduce the heat to medium-low and let the mushrooms simmer gently for about 10 more minutes, stirring occasionally to prevent sticking and to deepen the flavors.
  7. Garnish and Serve: Optionally garnish with extra chopped fresh herbs before serving to add a fresh, vibrant touch. Serve warm alongside your favorite main dishes.

Notes

  • Use cremini or white button mushrooms for best results.
  • Ensure mushrooms are dry before cooking to avoid excess water in the pan.
  • This dish pairs excellently with grilled meats, roasted vegetables, or as a topping for toast or steaks.
  • Adjust cayenne and crushed red pepper flakes according to your preferred heat level.
  • For a vegan variation, substitute butter with vegan butter or additional olive oil and omit Dijon mustard if concerned about dietary restrictions.
