Ingredients

Potatoes

  • 3 pounds red potatoes (about 12 medium, scrubbed well)

Dairy & Flavorings

  • 4 tablespoons unsalted butter (cubed)
  • 4 small-medium garlic cloves (minced; use 6 for extra flavor)
  • ⅓ cup Greek yogurt (2% or full fat for best flavor)
  • ½ cup half & half
  • 1 teaspoon kosher salt (to taste)

Instructions

  1. Boil Potatoes: Bring a large pot of water to a rolling boil. While waiting, chop the red potatoes into quarters to ensure even cooking. Carefully add the potatoes to the boiling water and reduce the heat to medium to maintain a gentle boil. Cook the potatoes for 20-25 minutes, or until they are tender and easily pierced with a fork. Drain the potatoes thoroughly and remove the pot from heat.
  2. Mash Potatoes: In the same pot, add the cubed unsalted butter, minced garlic, Greek yogurt, ¼ cup of the half & half, and kosher salt. Use a potato masher to mash the potatoes until you reach your desired consistency. For a creamier, smoother texture, gradually mix in the remaining half & half while continuing to mash. Optionally, use a handheld electric mixer for an ultra-smooth finish.
  3. Serve: Transfer the mashed potatoes to a serving dish. Top with extra butter, freshly chopped parsley, and a sprinkle of Parmesan cheese if desired. Serve warm as a delicious side to your main course.
