Ingredients

Dry Ingredients

  • 3/4 cup Almond flour
  • 1/2 cup Old Fashioned Oats
  • 1/2 cup Beef based protein powder

Wet Ingredients

  • 2 tablespoons Coconut Oil
  • 1/3 cup Almond butter
  • 1 tablespoon Maple syrup
  • 3 tablespoons almond milk

Add-ins & Toppings

  • 1/2 cup dried cherries
  • 1/8 cup almonds

Instructions

  1. Combine Dry Ingredients: In a large bowl, mix together almond flour, old fashioned oats, and beef protein powder until evenly combined.
  2. Melt Wet Ingredients: Heat the coconut oil until fully melted. Whisk in the almond butter and maple syrup until smooth and well combined.
  3. Mix Wet into Dry: Pour the wet mixture into the dry ingredients bowl and stir gently to combine all components.
  4. Add Almond Milk Gradually: Slowly add the almond milk one tablespoon at a time, mixing after each addition until the mixture reaches a cohesive, slightly sticky consistency.
  5. Fold in Dried Cherries: Add the dried cherries to the mixture and stir until they are evenly distributed throughout.
  6. Prepare the Pan: Line an 8×8 inch pan with parchment paper to prevent sticking. Transfer the bar mixture into the pan.
  7. Press the Mixture: Using another piece of parchment paper on top, firmly press the mixture down evenly and compactly into the pan to ensure the bars hold together when cut.
  8. Add Almond Topping: Sprinkle the almonds over the pressed mixture and use a silicone spatula to gently press them into the surface so they adhere well.
  9. Freeze to Set: Place the pan in the freezer and chill for one hour to allow the bars to firm up properly.
  10. Cut and Store: Remove from the freezer and cut the set mixture into ten even bars. Store the bars in the freezer or refrigerator to keep fresh. They can be enjoyed chilled or straight from the freezer.
