This Gochujang Pasta is a creamy and flavorful fusion dish combining spicy Korean gochujang paste with rich coconut cream, resulting in a unique and delicious twist on traditional pasta. Perfect for those looking to explore bold, spicy flavors with a creamy texture in a quick and easy meal.

Ingredients

Pasta

  • 8 oz long pasta noodles (such as Canule)

Sauce

  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1/2 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 cup gochujang paste
  • 12 oz coconut cream

Instructions

  1. Cook the Pasta: Cook the pasta noodles according to the package directions until al dente. Reserve about 1/4 cup of the pasta cooking water before draining the noodles.
  2. Prepare the Aromatics: In a large pan, melt the butter over low heat. Add the minced garlic and red pepper flakes, sautéing gently to release their flavors without burning.
  3. Add the Gochujang Paste: Stir in the gochujang paste and cook for about 3-5 minutes until the paste deepens in color to a dark red, which enhances its flavor. Season the mixture with salt.
  4. Incorporate the Coconut Cream: Slowly pour in the coconut cream while stirring continuously. Cook the sauce over low heat until it thickens to a creamy consistency.
  5. Combine Pasta and Sauce: Once the pasta is cooked and drained, add it directly to the pan with the sauce. Stir in about 1/4 cup of the reserved pasta water to help the sauce coat the pasta evenly.
  6. Serve: Plate the pasta, optionally sprinkle with additional red pepper flakes for extra heat, and enjoy this creamy, spicy fusion dish!

Notes

  • Reserve pasta water to adjust sauce consistency and help the sauce adhere to the noodles.
  • Adjust red pepper flakes to taste depending on your preferred spice level.
  • Use full-fat coconut cream for the best creamy texture and flavor; coconut milk is not as thick.
  • This dish can be made vegan by substituting butter with a plant-based alternative.
  • Gochujang paste can be found in Asian grocery stores or online.
