Greek Chicken Bites are tender, lemony, and herb-infused chicken pieces marinated in a zesty blend of olive oil, lemon, garlic, and oregano, then pan-seared to juicy perfection and deglazed with white wine for a flavorful sauce. This quick and easy dish is perfect for a healthy weeknight dinner or meal prep.

Ingredients

Chicken

  • 1 lb. chicken breasts, cut into 1-inch pieces (about 2 breasts)

Marinade

  • 2 tablespoons extra-virgin olive oil
  • Juice and zest of 1 lemon (about 2 tablespoons juice and 1 teaspoon zest)
  • 2 cloves garlic, minced (about 1 teaspoon)
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Deglazing

  • 1/4 cup white wine (or chicken broth or water)

Instructions

  1. Prepare the marinade: In a small bowl or glass measuring cup, combine 2 tablespoons of extra-virgin olive oil, juice and zest of 1 lemon, minced garlic, dried oregano, kosher salt, and black pepper. Mix well to blend all the flavors.
  2. Marinate the chicken: Place the chicken pieces in a plastic bag or container with a lid. Pour the prepared marinade over the chicken and stir or shake to coat all pieces evenly. Allow the chicken to marinate for at least 20 minutes, preferably 2 to 24 hours for the best flavor. If short on time, you can skip or shorten the marinating time.
  3. Heat the skillet: Preheat a large heavy skillet over medium-high heat until it is very hot. This typically takes a few minutes for a cast iron skillet or about 30 seconds to 1 minute for other materials.
  4. Cook the chicken: Add the marinated chicken pieces to the skillet, spreading them out in an even layer. Let them cook undisturbed for approximately 5 minutes on one side to develop a sear.
  5. Flip and finish cooking: Turn the chicken pieces over and cook for another 5 minutes or until they are fully cooked through. The internal temperature should reach 165°F (74°C), or you can cut into a piece to ensure there’s no pink remaining.
  6. Deglaze the pan: Pour 1/4 cup of white wine into the skillet and use a spatula or wooden spoon to scrape up the browned bits stuck to the bottom. Continue to sauté the chicken while the wine evaporates, coating the chicken in the flavorful sauce left behind. Once most of the liquid has evaporated, remove from heat and serve immediately.

Notes

  • Marinating longer (up to 24 hours) will enhance the flavor and tenderness of the chicken.
  • If you don’t have white wine, substitute with chicken broth or water.
  • Use a heavy skillet like cast iron for better searing results.
  • Ensure not to overcrowd the pan; cook in batches if necessary to get a good crust on the chicken pieces.
  • Check the internal temperature with a meat thermometer to avoid undercooked chicken.
