This Grilled Carrots recipe features tender, naturally sweet carrots enhanced by a flavorful balsamic rosemary glaze. Blanched for tenderness and then grilled to perfect charred edges, these carrots make an elegant and healthy side dish for any meal.

Ingredients

Carrots

  • 1 pound carrots

Glaze

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons fresh rosemary, minced
  • 1 tablespoon honey
  • 1 tablespoon avocado oil
  • ¼ teaspoon salt

Instructions

  1. Preheat grill: Preheat your grill to medium-high heat, about 450°F, to prepare for grilling the carrots.
  2. Prepare carrots: Peel the carrots and trim them so they are uniform in size, approximately 1 inch at the widest point for even cooking.
  3. Boil carrots: Bring a large pot of water to a boil, then add the carrots and cook for 5-6 minutes until they become tender. Drain and pat dry to remove excess moisture.
  4. Make glaze: In a medium bowl, combine balsamic vinegar, minced rosemary, honey, avocado oil, and salt. Stir well and set aside.
  5. Coat carrots: Toss the boiled carrots in the balsamic glaze, ensuring they are evenly coated. Use tongs to lift the carrots out, reserving any remaining glaze.
  6. Grill carrots: Place the carrots on the hot grill and cook for 15 minutes, turning every 5 minutes to sear each side evenly and develop a slightly charred flavor.
  7. Serve: Transfer the grilled carrots to a serving plate or bowl and drizzle with the reserved glaze before serving.

Notes

  • Blanching the carrots before grilling ensures they become tender while retaining some firmness.
  • Using fresh rosemary adds a robust herbal note; dried rosemary can be substituted but use less as it is more concentrated.
  • For added flavor, sprinkle some freshly ground black pepper or a pinch of chili flakes before grilling.
  • If you don’t have a grill, you can use a grill pan on the stovetop over medium-high heat.
  • Leftover grilled carrots can be stored in an airtight container in the refrigerator for up to 3 days.
