Ingredients

Dough

  • 1 ½ cups warm water
  • 2 teaspoons honey
  • 1 teaspoon active dry yeast

Instructions

  1. Activate the yeast: Mix the warm water and honey in the bowl of a stand mixer. Sprinkle the active dry yeast on top and set aside for 10-15 minutes, until foamy, indicating the yeast is active.
  2. Initial mixing and first rise: Add two cups of the flour to the yeast mixture and gently mix until fully incorporated. Cover the bowl with plastic wrap and place in a warm spot to rest for one hour to begin fermentation.
  3. Knead dough and second rise: Incorporate the kosher salt, olive oil, and remaining two cups of flour into the dough. Using a dough hook attachment, knead for 5-7 minutes until smooth and elastic. Coat the dough with olive oil, place in a clean bowl, cover with plastic wrap, and let rise in a warm place until doubled in size, about one hour.
  4. Divide and shape: Using floured hands, punch down the risen dough and divide into four equal discs. Arrange discs on a lightly floured baking sheet, cover with a clean kitchen towel, and let them rise for an additional 30 minutes.
  5. Preheat grill and prepare dough for grilling: Preheat your grill to high heat. Flour your hands and stretch each dough disc into a thin oval shape, leaving slightly thicker edges for a crust. Brush olive oil over the top surface of each dough oval.
  6. Grill the dough base: Place the dough oval olive oil side down on the grill. Close the grill lid and cook for 2-3 minutes until grill marks appear and the dough starts to set.
  7. Add oil and toppings, then finish cooking: Brush olive oil on the top side of the dough, carefully flip to the cooked side. Immediately add your desired toppings such as cheese, sauce, vegetables, or meats. Close the grill lid and cook for another 2-3 minutes or until the cheese melts and the crust is cooked through.
  8. Serve hot: Remove the pizza from the grill, slice into portions, and serve immediately to enjoy the smoky grilled flavor and crisp crust.
